:-D Mine have done this too - not the ones for planting, which are set to chit in the light, but the ones for eating. There's nowhere cool enough to store them at this time of year. But you can just break off the shoots and plant the tubers anyway.
It looks like the sweet potato I found once in my parents' pantry. Yeah, sweet potato, singular. I'm not sure how long it'd been in there, but it was making spirited efforts to get out.
