I'm now getting information from some folx that these are possibly either morning glories or bindweed aka wild morning glories. Both seem to be pretty invasive. Project for the day is go and start getting rid of them. If they are what they might be, apparently what one wants to do is not uproot them but to cut them off at ground level. Forces the plant to spend energy growing new local shoots rather than spending energy propagating underground.
